East-Indian-Med​iterranean Taco

This is a delicious fusion of East-India, Latin America, and Mediterranean ingredients. I am all about the mixture of flavors and textures, and this is a perfect dish for that. First, you need to start with the bases: Naan, "Meat" and condiments. Prep Time: 10 minutes Cook Time: Variable Calories: Approximately 300 calories per taco INGREDIENTS: Naan I got mine from Trader Joes. They are frozen packets of 4 and need to be heated up according to the instructions on the package. If you are not near a trader joe's, you can get pita bread and it should work just fine. "Meat" * I said "meat" in quotation marks because you can use any number of things with this. I used Morning Star's veggie meat substitute, but you can use ground meat of any sort. Breakfast of Champions

Today, I got up rather early, so I figured: why not make some breakfast and also blog? I haven't done that in a while. I call this breakfast of champions because it has everything you would want in a strong meal: protein, carbohydrates, fat (slightly), minerals, fiber, etc. etc. Not to mention it was delicious. Easy stuff first: 1 glass of fat free skim milk 1 glass of orange juice Two wheat toasts--one with fat-free grape jelly, and another with Nutella (indulgence) Fruit selection: Raspberries, blackberries, strawberries, grapes, and blueberries, topped with fat-free redi-whip Omelette: Ingredients: 2 egg whites only 1 egg with yolk 1 tbsp extra virgin olive oil 1/8 cup chopped red peppers 1/8 cup chopped green peppers 1/4 cup onion (minced=chopped into fine pieces) 1/4 cup white baby bella mushrooms 1 slice of garlic minced 1/4 cup tomatoes (diced) Fresh basil (1-2 leaves) Rice cheese (or cheese of your choice) Spices: (Tsp =small spoon, tbsp = big spoon) 1/4 tsp Thyme 1/4 tsp P...

Spring Salad

Not to toot my own horn, but this salad was AMAZING. General Info: Serves : 1 Prep time : 5 min Calories : Approx 300 calories Ingredients : Spring mix lettuce Cucumber slices (4-5 thin slices) 1 sweet Clementine 4-5 seedless green grapes 1/2 tomato diced 1/6 onion (1/4 cup) 1/4 cup sliced mushrooms Neil's Ultimate Nut Mix : Almonds, Walnuts, Dried cherries, Cried cranberries, Dried blueberries, Cashews, Raisins Dressing : 3 tbsp olive oil 2 tbsp balsamic vinegar 1/2 tsp salt 1 tsp fresh black pepper 1/2 tsp parsley 1/2 tsp garlic paste 1 tbsp cilantro paste Directions : Add all the ingredients into a large bowl. Take another large bowl and put the empty bowl on top of the full bowl. Then shake vigorously. Make sure that nothing leaks out (because otherwise it will be mess). Open up and you will see a perfectly tossed salad. Bon apetite!
