Spring Salad
Not to toot my own horn, but this salad was AMAZING.
General Info:

Calories: Approx 300 calories
Ingredients:
Spring mix lettuce
Cucumber slices (4-5 thin slices)
1 sweet Clementine
4-5 seedless green grapes
1/2 tomato diced
1/6 onion (1/4 cup)
1/4 cup sliced mushrooms
Neil's Ultimate Nut Mix: Almonds, Walnuts, Dried cherries, Cried cranberries, Dried blueberries, Cashews, Raisins
Dressing:
3 tbsp olive oil
2 tbsp balsamic vinegar
1/2 tsp salt
1 tsp fresh black pepper
1/2 tsp parsley
1/2 tsp garlic paste
1 tbsp cilantro paste
Directions:
Add all the ingredients into a large bowl. Take another large bowl and put the empty bowl on top of the full bowl. Then shake vigorously. Make sure that nothing leaks out (because otherwise it will be mess). Open up and you will see a perfectly tossed salad. Bon apetite!
